Cut the roots from the bulb of the green onion, and combine the entire green onion in a blender with the can of coconut cream, half of the lemon, salt, and pepper.
Blend until the consistency is creamy. Taste and add more seasoning if desired.
Let it sit for 30 minutes and taste for flavor once more. If you prefer, add another green onion or different seasoning.
You can use this in place of sour cream or add to meals to get the creamy texture.
